  • 3 cups grated zucchini
  • 2 green onions, thinly sliced
  • 2 eggs
  • 1/2 cup feta cheese, crumbled
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • 1/2 cup wholemeal flour
  • 1/2 teaspoon baking powder
  • Olive oil for frying

Instructions

  1. Grate the zucchini into a colander and sprinkle with salt. Let it drain for 30 minutes. Squeeze out excess moisture.
  2. In a mixing bowl, combine drained zucchini, eggs, green onions, garlic, dill, feta cheese, salt, and pepper. Sprinkle flour and baking powder over the mixture; stir until just combined.
  3. Heat olive oil in a frying pan over medium heat. Place tablespoons of the mixture into the pan and flatten slightly. Fry until golden brown on both sides (about 3-4 minutes per side). Drain on paper towels before serving.
