  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced carrots, onions, celery, and minced garlic until onions are translucent.
  2. Add black pepper, dried parsley, thyme, salt, and bay leaves. Place boneless chicken breasts into the pot and cover with chicken broth. Bring to a boil then reduce to a simmer.
  3. Simmer for 30 minutes until the chicken is cooked through and tender enough to shred.
  4. Remove the chicken to shred it with two forks. Stir in dry orzo pasta into the broth and cook according to package instructions.
  5. Once pasta is al dente, return shredded chicken to the pot along with fresh squeezed lemon juice. Stir well and serve hot.
