Ingredients

Scale
  • 4 cups curly kale
  • 1/4 tsp fresh minced garlic
  • 1/2 cup croutons
  • 1/4 cup freshly grated Parmesan cheese
  • 2 TBSP fresh lemon juice
  • 2 TBSP extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Rinse and dry the curly kale thoroughly. Remove leaves from the stem and chop finely.
  2. Place the chopped kale in a bowl and drizzle a bit of dressing over it. Massage the leaves until they soften and darken in color.
  3. In another bowl, whisk together lemon juice, olive oil, garlic, salt, and pepper to create your dressing.
  4. Pour the dressing over the massaged kale and toss well. Add grated Parmesan on top before serving.
