  1. In a saucepan over medium heat, combine raspberries, sugar, and lemon juice. Simmer for 5-7 minutes until thickened. Strain and set aside.
  2. Preheat your oven to 325°F.
  3. Mix graham cracker crumbs, sugar, and melted butter in a bowl; press into a springform pan. Bake for 8-10 minutes until golden and cool.
  4. Beat cream cheese until smooth; gradually add sugar and mix in sour cream, zest, juice, and vanilla. Add eggs one at a time.
