  • 2 tbsp fresh lemon juice
  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar (for raspberry swirl)
  • 1 tbsp lemon juice (for raspberry swirl)

Instructions

  1. Prepare the raspberry sauce by combining raspberries, sugar, and lemon juice in a saucepan. Simmer for about 5-7 minutes until thickened. Strain to remove seeds.
  2. Preheat oven to 325°F. Mix graham cracker crumbs with sugar and melted butter; press into the bottom of a springform pan. Bake for 8-10 minutes until golden.
  3. Beat cream cheese until smooth; add sugar, sour cream, lemon zest, lemon juice, and vanilla extract. Incorporate eggs one at a time on low speed.
  4. Pour filling over crust; dollop raspberry sauce on top and swirl gently with a knife.
  5. Bake for approximately 55-65 minutes until set. Cool gradually in the oven to prevent cracks.
  6. Chill in the refrigerator for at least four hours or overnight before serving.
