  • 3 cups low-sodium chicken broth
  • 2 lbs Yukon gold potatoes
  • 4 slices bacon (optional)
  • 7 oz sun-dried tomatoes
  • 1 cup Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot or Dutch oven, cook the bacon until crispy. Remove and set aside, keeping the fat in the pot.
  2. Sear the seasoned chicken breasts in bacon fat until golden brown, then remove from the pot.
  3. Sauté onions and garlic in butter until soft.
  4. Add flour to create a roux; stir constantly until golden.
  5. Mix in sun-dried tomatoes, then add chicken broth, heavy cream, and seasonings. Bring to a simmer.
  6. Add chopped potatoes and simmer until tender.
  7. Stir in Parmesan cheese until melted.
  8. Shred cooked chicken and return to the pot; simmer briefly.
