  • 1 can garbanzo beans
  • 1 can cannellini beans
  • 1 can kidney beans
  • 1/4 cup red onion, chopped fine
  • 3/4 cup celery, chopped
  • 1 small cucumber, peeled, seeded, and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tomatoes, chopped fine
  • Optional: 1/2 cup Kalamata olives
  • Optional: 1/3 cup pepperoncini
  • 1/4 cup extra-virgin olive oil
  • Juice of 11/2 lemons
  • 1 clove garlic, peeled and minced
  • 1/2 teaspoon dried Italian seasoning
  • Ground pepper and sea salt to taste

Instructions

  1. Rinse and drain all canned beans under cold water.
  2. Chop the red onion, celery, cucumber, parsley, basil, and tomatoes into bite-sized pieces.
  3. In a large bowl, combine all the beans and chopped veggies; toss gently.
  4. In a separate bowl or jar, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad mixture and toss thoroughly to coat.
  6. Chill in the refrigerator for 45–60 minutes before serving to enhance flavors.
