  • Extra-virgin olive oil
  • Grape tomatoes
  • Mini cucumbers
  • Artichokes
  • Green olives
  • Capers
  • Garlic cloves
  • Red onion
  • Chili flakes

Instructions

  1. Preheat oven to 425°F (220°C). Prepare cauliflower by breaking it into florets and placing them on a parchment-lined baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for about 30 minutes until golden brown.
  2. While the cauliflower roasts, prepare the vegetables in a large bowl: combine chopped cucumbers, quartered grape tomatoes, sliced red onion, minced garlic, artichokes, green olives, capers, parsley, and chili flakes.
