  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 bunch kale
  • 2.5 cups cooked jasmine or basmati rice
  • 1/4 cup sundried tomatoes in olive oil
  • 1/2 cup vegetable broth

Instructions

  1. Cut chicken into bite-sized pieces and marinate with olive oil, garlic powder, salt, and Italian seasoning.
  2. Heat a large skillet over medium-high heat, then add the seasoned chicken in one layer. Brown for about five minutes.
  3. Stir the chicken and cook for an additional 3-5 minutes until fully cooked. Remove from skillet.
  4. In the same skillet, sauté chopped onions and minced garlic for 2-3 minutes until softened.
  5. Add chopped kale and vegetable broth; cook until kale is wilted.
  6. Return the chicken to the skillet along with cooked rice and sundried tomatoes; mix well and let sit covered for five minutes before serving.
