  • 1 lb. ground chicken
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons olive oil for cooking

Instructions

  1. Sauté the onion in olive oil until translucent. Add garlic and cook until fragrant.
  2. In a bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper.
  3. Shape the mixture into about eight patties.
  4. Cook each patty in olive oil over medium heat for 5-6 minutes per side until golden brown.
  5. Serve warm with tzatziki sauce or garnished with fresh herbs.
