  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (cut into halves)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese packed in oil & herbs
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Drain and rinse the chickpeas under cold water before adding them to a large salad bowl.
  2. Chop the cucumbers, red onion, red bell pepper, and halve the tomatoes; add to the bowl.
  3. Chop fresh oregano and parsley, then mix them into the salad for added flavor.
  4. In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
  5. Drizzle the dressing over the salad and gently toss everything together until well coated.
