  • 3 cups cooked French green lentils
  • 4 cups peeled and grated carrots
  • 3 celery ribs, diced
  • 1/2 a medium red onion, finely chopped
  • 1/2 cup fresh mint leaves, finely chopped
  • 1/2 cup raisins or currants
  • 1/2 cup toasted walnuts, pepitas, or sunflower seeds
  • 1/3 cup pitted Kalamata olives, sliced (optional)
  • A large handful of chopped kale (optional)
  • 1/4 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice, plus more to taste
  • 2 tbsp balsamic vinegar
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili flakes (optional)
  • 3/4 tsp fine sea salt
  • Freshly ground black pepper, to taste
  • 1 tsp dijon mustard
  • 1 tsp pure maple syrup
  • 2 garlic cloves, minced

Instructions

  1. In a large bowl, combine cooked lentils, grated carrots, diced celery, chopped red onion, mint leaves, raisins or currants, toasted walnuts or seeds, and olives if using.
  2. In a separate bowl, whisk together olive oil, lemon juice, balsamic vinegar, turmeric, cumin, cinnamon, smoked paprika, chili flakes (if desired), salt, pepper, dijon mustard, maple syrup, and minced garlic until well blended.
  3. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly. Adjust seasoning with additional lemon juice if needed.
  4. Serve chilled or at room temperature alongside pita bread and hummus.
