  • ½ cup sour cream
  • 1 teaspoon pure vanilla extract
  • ½ cup unsalted butter (softened)
  • 1 jar vegan marshmallow fluff (7 ounces)
  • 2 ½ cups confectioners’ sugar
  • 2 to 3 tablespoons milk
  • Colorful candies for decoration

Instructions

  1. Preheat your oven to 350°F and line muffin tins with paper liners.
  2. In a saucepan, bring 1 ½ cups of water to a boil, then whisk in cocoa powder and sugar until smooth. Cool for about 15 minutes.
  3. Mix flour, baking powder, baking soda, and salt in another bowl.
  4. In a separate bowl, beat eggs, oil, sour cream, and vanilla; then add the cooled chocolate mixture.
  5. Gradually mix in the dry ingredients until just combined.
  6. Pour batter into liners (¾ full) and bake for about 20 minutes or until a toothpick comes out clean. Cool on wire racks.
  7. For frosting, beat together softened butter, vegan marshmallow fluff, confectioners’ sugar, and milk until creamy.
  8. Once cupcakes are cool, pipe frosting in mummy-like bands and add colorful candies for eyes.
