  • 1 cup heavy whipping cream, cold
  • 1 (3.4-ounce) package instant banana pudding mix
  • 34 medium ripe bananas, sliced
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a food processor or zip-top bag, crush vanilla wafers into fine crumbs. Combine with melted butter and sugar until moistened. Press firmly into the bottom of a 9-inch springform pan and chill.
  2. Beat softened cream cheese until smooth. Gradually mix in sweetened condensed milk.
  3. In a separate bowl, whip cold heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  4. Mix in instant banana pudding, vanilla extract, and lemon juice for flavor.
  5. Layer sliced bananas over the crust, then add half of the cheesecake filling. Repeat layers with remaining bananas and filling.
  6. Cover tightly and refrigerate for at least 6 hours or overnight before serving.
