  • 1 pound orzo pasta
  • 1.5 pounds medium to large shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup dry white wine (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. In a large oven-safe skillet or Dutch oven, heat olive oil and butter over medium heat. Sauté diced onion until softened, about 5 minutes.
  2. Add minced garlic and red pepper flakes; cook for another minute until fragrant.
  3. Stir in orzo pasta and toast for 1–2 minutes. If using wine, add it now and let simmer for one minute.
  4. Pour in chicken broth and lemon zest; season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10–12 minutes.
  5. Uncover, stir in shrimp, cover again, and cook for an additional 3–5 minutes until shrimp are pink.
  6. Remove from heat; stir in Parmesan cheese and heavy cream until melted.
  7. Finish with lemon juice and parsley; adjust seasoning as needed before serving.
