- 1 1/2 cups uncooked long grain rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 1/2 cups chicken broth
- 1/2 cup barbecue sauce
- Salt and pepper to taste
- Optional garnish: chopped green onions or parsley
- Heat olive oil in a large skillet over medium-high heat. Sear the sliced sausage until browned, then set aside.
- In the same pan, sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
- Stir in the uncooked rice, toasting it for a few minutes until lightly golden.
- Pour in the chicken broth and barbecue sauce, scraping any bits from the pan.
- Return the sausage to the pan, bring to a simmer, cover, and reduce heat to low.
- Let simmer for about 18–20 minutes until rice is tender.
- Remove from heat and let sit covered for five minutes before fluffing with a fork.
