  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • Zest of 3 oranges (35 Tbsp)
  • ¼ cup fresh squeezed orange juice

  1. Preheat your oven to 425°F (220°C) and line a muffin pan with liners.
  2. In one bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, buttermilk, vegetable oil, orange zest, and orange juice.
  4. Gradually combine the dry ingredients into the wet mixture, mixing just until combined.
  5. Let the batter rest for about 15 minutes to enhance texture.
  6. Fill each muffin liner all the way to the top with batter.
  7. Bake for 7 minutes at 425°F, then reduce temperature to 350°F (175°C) for an additional 13-16 minutes until golden brown.
