  • 1 whole chicken (35 lbs)
  • 1 medium onion
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30 minutes before roasting.
  2. Preheat the oven to 425ºF (218ºC).
  3. Place the chicken breast side up on a roasting pan and pat the skin dry.
  4. Stuff the cavity with halved onion and optional garlic cloves or lemon.
  5. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  6. Coat the chicken generously with the seasoning paste.
  7. Roast for 70-90 minutes until an internal temperature of at least 165ºF (74ºC) is reached.
  8. Let the chicken rest for five minutes before carving and serving.
