  • 1 cup almond flour
  • 1/4 cup organic pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tbsp coconut butter
  • 1/2 tbsp maple syrup
  • 1/2 tbsp unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs until well-beaten.
  3. Add almond flour, pumpkin puree, maple syrup, baking powder, vanilla extract, cinnamon, and pumpkin pie spice. Blend until smooth.
  4. Spray a donut pan with nonstick spray and fill each mold about three-quarters full with batter.
  5. Bake for 20-22 minutes or until a toothpick inserted comes out clean.
  6. For icing, mix coconut butter, almond milk, and maple syrup in a microwave-safe bowl; heat for 30 seconds or until melted and smooth.
  7. Cool donuts before dipping into icing and enjoy!
