4 (6-ounce) salmon fillets
3/4 cup fresh orange juice
2 tablespoons oil
2 teaspoons minced garlic
1 tablespoon fresh grated ginger
2–3 tablespoons honey
1 tablespoon rice vinegar
3 tablespoons low sodium soy sauce or tamari
1 tablespoon cornstarch
Instructions
In a medium bowl, whisk together orange juice, oil, garlic, ginger, honey, rice vinegar, soy sauce (or tamari), and cornstarch. Marinate salmon cubes for about 15 minutes.
Heat oil in a pan over medium-low heat. Sauté minced garlic and grated ginger for two minutes.
Add marinated salmon to the pan. Cook each side for about 3-4 minutes until golden brown.
Pour remaining marinade into a saucepan over low heat until just below boiling. Thicken with additional cornstarch mixed with water.
Pour three-quarters of the sauce over the cooked salmon and simmer for a few minutes to meld flavors.
Serve over rice with broccoli and drizzle with leftover sauce.
