  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup flour
  • 2 eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 3 tablespoons olive oil (divided)

Instructions

  1. Preheat oven to 400F and position the rack in the top third.
  2. Cut chicken breasts in half lengthwise to create four pieces; pat dry and season with garlic powder, salt, and pepper.
  3. Set up three bowls: flour in one, beaten eggs in another, and a mixture of panko breadcrumbs, parmesan cheese, and Italian seasoning in the last.
  4. Heat 2 tablespoons of olive oil in an oven-proof skillet over medium heat.
  5. Coat each chicken piece first with flour, then egg, followed by pressing into the breadcrumb mixture.
  6. Cook two pieces at a time in the skillet for about 2-3 minutes on each side until golden brown; repeat with remaining pieces.
  7. Arrange cooked chicken back in the skillet and bake for about 5 minutes or until internal temperature reaches 165F.
  8. Serve immediately.
