  • 3 (8-oz.) blocks cream cheese, softened
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 2 tbsp. all-purpose flour
  • 1 sleeve graham crackers, finely crushed
  • 4 tbsp. butter (for topping)
  • 1 3/4 cups chopped pecans

Instructions

  1. Preheat oven to 325ºF and grease an 8" or 9" springform pan.
  2. In a bowl, beat cream cheese and brown sugar until smooth. Add eggs one at a time, then mix in sour cream, flour, and salt until combined.
  3. In another bowl, mix graham cracker crumbs, melted butter, brown sugar, and salt to form the crust; press it into the prepared pan.
  4. Pour filling over the crust and bake for about 1 hour and 30 minutes until the center jiggles slightly.
  5. Allow cooling gradually in the oven before refrigerating for at least five hours.
  6. For the topping, melt butter with brown sugar in a skillet; stir in cinnamon, heavy cream, and pecans.
  7. Serve by spooning warm topping over cheesecake.
