  • 100 grams granulated sugar
  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams powdered sugar
  • Food coloring (I used a bit of red)
  • 1 1/3 cups confectioners' sugar sifted
  • 4 tbsp unsalted butter softened
  • 1 tsp peppermint extract (or a bit more, to taste)
  • 1/21 tbsp milk or water (if necessary)

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a bowl, whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form.
  3. Sift together almond flour and powdered sugar; gently fold into the meringue mixture.
  4. Transfer the batter to a piping bag and pipe small circles onto the prepared sheets.
  5. Let them rest for 30 minutes to form a skin before baking for 15-20 minutes.
  6. While cooling, prepare the buttercream by mixing softened butter, powdered sugar, and peppermint extract until fluffy.
  7. Pipe buttercream on half of the macaron shells and sandwich them with the remaining shells.
  8. Allow them to set for at least an hour before enjoying.
