  • 8 oz elbow macaroni or penne
  • 3 cups sweet corn kernels (fresh or frozen)
  • 1 jalapeño pepper, seeded and minced (optional)
  • 3 tbsp butter
  • 1/4 cup chopped cilantro leaves
  • 1/2 cup crumbled cotija cheese
  • 1/2 cup mayonnaise
  • Juice from 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside to cool.
  2. In a skillet over medium heat, melt the butter and sauté sweet corn and optional jalapeño until charred, about 5-7 minutes.
  3. In a mixing bowl, combine cooked pasta, sautéed corn mixture, cilantro, cotija cheese, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper. Mix well.
  4. Cover and refrigerate for at least 30 minutes before serving chilled or at room temperature.
