  • 2 teaspoons honey
  • 21/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper
  • 3 cups diced pineapple
  • 1 cup cilantro (finely diced)
  • 2 tablespoons finely diced jalapeño
  • 1/2 cup diced red onion
  • Vegetable oil (for greasing grill/grill pan)
  • 1 large avocado (finely sliced or diced)
  • Coconut rice

Instructions

  1. Prepare the Chicken: Trim excess fat, slice the chicken breasts widthwise for even cooking, and pound gently to uniform thickness.
  2. Mix the Marinade: In a bowl, whisk together olive oil, lime zest, lime juice, garlic, honey, cumin, coriander, salt, and pepper. Reserve 3 tablespoons for basting.
  3. Marinate: Place chicken in a resealable bag with marinade; seal and refrigerate for at least 30 minutes.
