  • 2 sheets frozen puff pastry, thawed
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 4 sweet onions, thinly sliced
  • 2 cups freshly grated mozzarella cheese
  • ½ cup apple cider
  • Fresh sage leaves (about 2 handfuls)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, caramelize the sliced onions with salt and pepper over medium-low heat for about 25–30 minutes until golden brown. Add apple cider and cook for another 5 minutes.
  3. Roll out the puff pastry on a floured surface and place it on parchment-lined baking sheets. Score a 1-inch border around the edges.
  4. In a bowl, mix ricotta cheese and pumpkin puree; season with salt and pepper. Spread this mixture inside the pastry border.
  5. Layer the caramelized onions on top of the filling followed by mozzarella cheese and sage leaves.
  6. Bake for 25–30 minutes until puffed up and golden brown. Serve warm or at room temperature.
