  • 1/2 cup Unsalted Butter, room temperature
  • 1 cup Sugar
  • 3 large Eggs
  • 1 1/2 tsp Vanilla Extract
  • 3/4 cup Pumpkin Puree
  • White Chocolate (for drizzling)

Instructions

  1. Preheat oven to 300°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, espresso powder, salt, cinnamon, ginger, and nutmeg.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract and pumpkin puree.
  4. Gradually combine the dry ingredients into the wet mixture until fully incorporated.
  5. Shape dough into two logs on the baking sheet and bake for 35–40 minutes until firm.
  6. Allow to cool for 10 minutes, then slice into 1-inch pieces.
  7. Bake sliced biscotti cut-side down for another 30 minutes until crisp.
