  • 1 3/4 cups all-purpose flour (for batter)

  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk (at room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix cold butter, brown sugar, flour, and salt until crumbly for the streusel topping; set aside.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a third bowl, beat melted butter with sugars until smooth; add eggs one at a time followed by vanilla extract and pumpkin puree.
  5. Gradually mix dry ingredients into the wet mixture along with buttermilk until just combined.
