  • 12 oz gluten-free pasta spirals
  • 1 avocado, diced
  • 12 oz cooked bacon, crumbled
  • 1 box cherry tomatoes, halved
  • 1 head romaine lettuce, chopped
  • 1/4 cup red onion, finely chopped
  • 2/3 cup plant-based mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tsp minced garlic
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While pasta cooks, dice avocado and halve cherry tomatoes. Crumble bacon into bite-sized pieces.
  3. In a mixing bowl, combine red onion, plant-based mayonnaise, apple cider vinegar, minced garlic, salt, and pepper; mix until smooth.
  4. In a large bowl, combine cooled pasta with avocado, tomatoes, bacon, and lettuce. Pour dressing over and toss gently until well coated.
  5. Garnish with fresh chives if desired and serve chilled or at room temperature.
