  • 2 eggs
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup mozzarella cheese
  • ¼ cup red onion (finely minced)
  • 1 cup panko breadcrumbs
  • 4 tablespoons avocado oil (divided)

Instructions

  1. In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and pepper until well mixed.
  2. Stir in the mozzarella cheese and minced red onion; let the mixture sit for five minutes.
  3. Fold in the panko breadcrumbs until evenly mixed.
  4. Scoop out portions using a ¼ cup measuring cup and shape them into patties with wet hands.
  5. Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Cook half the patties for about 3-4 minutes per side until golden brown. Repeat with remaining oil and patties.
