  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons heavy cream or milk
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste
  • ¼ cup honey
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 425°F (220°C). Toss peeled, halved carrots with olive oil, salt, pepper, and optional smoked paprika. Spread on a parchment-lined baking sheet and roast for 25–30 minutes.
  2. While the carrots roast, blend ricotta, cream (or milk), olive oil, lemon zest, salt, and pepper in a food processor until smooth.
  3. In a small saucepan over low heat, warm honey with red pepper flakes for about 3–4 minutes; add apple cider vinegar before removing from heat.
  4. Serve roasted carrots over whipped ricotta and drizzle with hot honey.
