  • 8 ounces goat cheese, softened
  • 1 cup cream cheese, softened
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper, to taste
  • Fresh vegetables or bread for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of the garlic head and wrap it in aluminum foil with 1 tablespoon of olive oil.
  3. Roast the garlic in the oven for about 30-35 minutes until soft and golden.
  4. In a mixing bowl, combine softened goat cheese, cream cheese, sour cream, and remaining olive oil. Mix until smooth.
  5. Squeeze roasted garlic cloves into the mixture and stir in fresh thyme leaves along with salt and pepper to taste.
