- 8–9 medium starchy potatoes, thinly sliced
- 1 head garlic, cut the top off
- 1 cup heavy cream
- 1/4 cup whole milk
- 1 tablespoon unsalted butter, plus more for greasing the baking dish
- 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
- 1/4 tsp nutmeg
- 1/2 cup grated parmesan cheese, divided
- 2 cups shredded Gruyère or mozzarella cheese
- Salt and pepper to taste
- Fresh chives, for garnish
- Preheat oven to 375°F (190°C). Roast the head of garlic wrapped in foil for about 30 minutes until soft.
- Grease a 9×13-inch baking dish with butter.
- Thinly slice the potatoes using a mandoline slicer for even cooking.
- Layer potato slices upright in the baking dish.
- In a saucepan over medium heat, combine heavy cream, milk, butter, half the parmesan cheese, thyme, nutmeg, salt, and pepper until well combined.
- Squeeze roasted garlic cloves into a bowl and mash them into a paste; mix into the cream mixture.
- Pour the cream mixture over the layered potatoes and cover with foil.
- Bake for 40 minutes, then remove foil and top with remaining cheeses. Bake uncovered for an additional 30 minutes until bubbly and golden brown.
- Let it cool slightly before serving; garnish with fresh chives.
