  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter, plus more for greasing the baking dish
  • 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Roast the head of garlic wrapped in foil for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice the potatoes using a mandoline slicer for even cooking.
  4. Layer potato slices upright in the baking dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half the parmesan cheese, thyme, nutmeg, salt, and pepper until well combined.
  6. Squeeze roasted garlic cloves into a bowl and mash them into a paste; mix into the cream mixture.
  7. Pour the cream mixture over the layered potatoes and cover with foil.
  8. Bake for 40 minutes, then remove foil and top with remaining cheeses. Bake uncovered for an additional 30 minutes until bubbly and golden brown.
  9. Let it cool slightly before serving; garnish with fresh chives.
