  • 1 tablespoon olive oil
  • 2 teaspoons paprika
  • 1 ½ teaspoons cumin
  • 5 pieces bacon
  • 4 cups broccoli florets
  • 1 cup chopped green onions
  • 1/3 cup mayo
  • 1 tablespoon lemon juice
  • 1/2 tablespoon nutritional yeast
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F. Toss red potatoes with olive oil, cumin, paprika, garlic powder, salt, and pepper. Spread on baking sheets lined with parchment paper and roast for 45–50 minutes until crispy.
  2. Cook bacon in a large sauté pan over medium heat until crispy; transfer to a paper towel-lined plate.
  3. In the same pan (after discarding excess grease), sauté broccoli until tender yet al dente.
  4. Mix mayo, lemon juice, remaining paprika, salt, and pepper in a bowl to make the dressing.
  5. In a large mixing bowl, combine roasted potatoes with broccoli, chopped bacon, and green onions. Add dressing and toss to combine.
