  • 38 pound turkey breast

Instructions

  1. Preheat your oven to 375°F.
  2. In a small bowl, mix olive oil, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper to form a paste.
  3. Place the turkey breast skin side up on a roasting rack. Gently loosen the skin and spread half of the spice mixture underneath. Rub the remaining mixture over the skin.
  4. Roast for approximately 20 minutes per pound until the internal temperature reaches 160°F.
  5. Remove from oven and let rest covered with foil for about 15 minutes before slicing.
