  • 250g dry Paccheri pasta (or preferred pasta shape)
  • 400g chicken or turkey sausage (removed from casings)
  • 2 shallots (or 1 small brown onion)
  • 1 tsp fennel seeds
  • 1 large lemon (zest and juice)
  • 12 tsp chili flakes
  • 2 cloves garlic
  • 300 ml reserved pasta water
  • 70g grated Parmesan cheese
  • 60 ml crème fraîche or plant-based cream alternative
  • Fresh parsley for garnish

Instructions

  1. In a large stainless steel frying pan over high heat, add oil and cook the sausage until browned, about 10-12 minutes.
  2. Add diced shallots and fennel seeds; sauté until softened (4-5 minutes).
  3. Meanwhile, boil water in a separate pot and cook the pasta according to package instructions until al dente.
  4. Zest the lemon into the pan; add chili flakes and sliced garlic. Stir for a minute before squeezing in lemon juice.
  5. Drain the pasta, reserving some water. Mix drained pasta with the sausage mixture, adding reserved water, crème fraîche, and Parmesan. Toss until coated.
  6. Season as needed with lemon juice or salt and serve garnished with parsley.
