  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 10 oz cremini mushrooms (sliced)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese (finely grated)
  • 1/2 cup Gruyère cheese (grated)
  • 2 large eggs (divided)

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large skillet, heat olive oil and butter over medium heat. Add onions and cook until soft, then stir in garlic and mushrooms until browned.
  3. Season with thyme, salt, and pepper. Add white wine if using, cooking until absorbed. Remove from heat; mix in cream cheese, Parmesan, Gruyère, and one beaten egg.
  4. Unroll the puff pastry on a floured surface and cut diagonal strips along each side while leaving the center intact for filling.
  5. Fill the center with mushroom mixture, fold in ends, then braid strips over the filling.
  6. Brush with remaining beaten egg and bake for 20–22 minutes until golden brown.
