  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (sliced)
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • 2 tbsp olive oil (for topping)
  • 1 tsp dried oregano (for topping)
  • ½ tsp salt (for topping)
  • ¼ tsp black pepper (for topping)
  • ½ cup crumbled feta cheese (for serving)
  • Fresh parsley (optional garnish)

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, garlic, Greek seasoning, and apple cider vinegar. Coat the chicken and let it sit while you prepare the veggies.
