  • 1.5 cups bomba rice or Arborio rice
  • 3 cups chicken stock
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron threads
  • 8 ounces Spanish chorizo (sliced)
  • 1 pound raw shrimp (peeled and deveined)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large paella pan over medium heat.
  2. Sauté diced onion for 5 minutes until softened, then add minced garlic and sauté for another 30 seconds.
  3. Stir in tomato paste and cook for 2-3 minutes until rust-colored.
  4. Add smoked paprika, saffron, salt, turmeric, and chili flakes; mix well.
  5. Toast the rice in the mixture for about 2 minutes until coated.
  6. Pour in chicken stock and bring to a simmer; reduce heat to low and cover for 10 minutes.
  7. Add sliced chorizo; cook covered for an additional 5 minutes.
  8. Place shrimp on top of the rice mixture, pressing them slightly into the liquid; cook until shrimp are pink (about 5-10 minutes).
  9. Garnish with fresh parsley before serving.
