  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • About ¼ lb deli ham
  • 12–15 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • marinara sauce
  • Cooked pasta or zucchini noodles, if desired

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté finely chopped onion and red bell pepper in olive oil until soft; add minced garlic and cook briefly.
  3. In a mixing bowl, combine ground beef, breadcrumbs, parmesan, eggs, tomato paste, sautéed vegetables, salt, black pepper, and parsley. Mix until just combined.
  4. On parchment paper, shape the meat mixture into an 8"x15" rectangle. Layer with deli ham, basil leaves, and mozzarella cheese.
  5. Roll tightly using parchment paper; seal edges well.
  6. Bake on a lined baking sheet for 1 hour or until internal temperature reaches 160°F (70°C). Let rest before slicing.
