  • 2 red onions, roughly chopped
  • 5 cloves garlic
  • 1 thumb-sized piece fresh ginger
  • 2 tbsp tomato purée
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ¼ cup chicken stock
  • 2 lbs chicken thighs, skinless & boneless
  • 5 tbsp heavy cream or fat-free yogurt
  • cilantro (coriander) for garnish
  • red pepper flakes or onion seeds for garnish
  • naan bread for serving
  • steamed rice or pilau for serving

Instructions

  1. Make a curry paste by blending chopped onions, garlic, ginger, tomato purée, spices, seasoning, and chicken stock in a food chopper until smooth.
  2. In the slow cooker, combine chicken pieces and the curry paste; mix well.
  3. Cook on HIGH for 3 hours or LOW for 5 hours without opening the lid.
  4. Stir in heavy cream or yogurt after cooking; heat through.
  5. Adjust seasoning as needed and serve garnished with cilantro and onion seeds over rice or with naan.
