  • 2 pounds frozen diced potatoes
  • 1 can whole kernel corn
  • 1 can Rotel diced tomatoes with green chilies
  • 1 can condensed cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. Layer cooked beef, chopped onion, minced garlic, frozen potatoes, corn, and Rotel in the slow cooker.
  3. Mix cream of mushroom soup with beef broth or milk and spices; pour over layers in the slow cooker.
  4. Cover and cook on low for about 3 hours until heated through.
  5. In the last 15 minutes, add shredded cheddar on top; cover until melted.
  6. Serve hot, optionally topped with crispy fried onions or crumbled bacon.
