  • 1 tablespoon chopped fresh garlic
  • ½ red jalapeño pepper (sliced)
  • 3 slices fresh galangal (or ginger)
  • 1 stalk lemongrass (cut into pieces)
  • 10 lime leaves (optional)
  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts (cut into bite-sized pieces)
  • 8 ounces white mushrooms (sliced)

Instructions

  1. In your slow cooker, combine onion, garlic, jalapeño, galangal, lemongrass, lime leaves, curry paste, and chicken broth. Stir well.
  2. Cover and cook on HIGH for 3 hours or LOW for 6 hours.
  3. After cooking, strain out solids using a slotted spoon to leave a smooth broth.
  4. Stir in coconut milk, chicken pieces, and mushrooms. Mix thoroughly.
  5. Cook on HIGH for another hour or LOW for two hours until chicken is cooked through.
  6. Add brown sugar, fish sauce, and lime juice to taste.
  7. Serve hot garnished with green onions and cilantro.
