  • 1 cup Milk (lukewarm)
  • 1/4 cup Water (lukewarm)
  • 2 1/4 tsp Instant Yeast (1 packet)
  • 1/4 cup Granulated Sugar
  • 3 3/4 cup All-Purpose Flour
  • 4 tbsp Unsalted butter (divided and melted (2 tbsp melted butter for the dough, 2 tbsp melted butter for brushing))
  • 1 tsp Salt
  • 1/8 cup Unsweetened Cocoa Powder
  • 1/8 cup Heavy Whipping Cream
  • 1/3 cup Semi-Sweet Chocolate Chips
  • 1 tbsp Granulated Sugar
  • 1 tbsp Unsalted Butter
  • 1/2 tsp Vanilla Extract
  • 1/8 tsp Salt
  • 1/4 cup Graham Cracker Crumbs (about 1 1/2–2 graham cracker sheets) (finely crushed)
  • 2 Large Egg Whites (room temperature)
  • 1/2 cup Granulated Sugar
  • 1/8 tsp Cream of Tartar
  • 1/8 tsp Salt
  • 1/2 tsp Vanilla Extract

Instructions

  1. In a mixing bowl, combine lukewarm milk and water. Sprinkle yeast on top and let sit for 5 minutes.
  2. Add sugar, flour, melted butter (for dough), and salt; mix until combined.
  3. Knead the dough on a floured surface for 5–7 minutes until smooth. Let rise covered for 20 minutes.
  4. Meanwhile, melt cocoa powder with cream over low heat; stir in chocolate chips until smooth.
  5. Roll out dough into a rectangle, brush with butter, and spread chocolate ganache evenly on top.
  6. Sprinkle graham cracker crumbs over the chocolate layer, then roll tightly into a log and cut into 2-inch pieces.
  7. Place rolls cut-side up on a greased baking sheet. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  8. For the topping, beat egg whites until frothy; gradually add sugar until stiff peaks form. Spread over warm rolls.
