  • 2 lbs ground beef (80% lean)
  • 1 cup grated cheddar cheese
  • 3/4 cup finely diced bell pepper
  • 3/4 cup bread crumbs
  • 2 tablespoons creole seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon finely chopped parsley
  • Salt (to taste)
  • 2 eggs (lightly beaten)
  • 1/2 cup tomato passata
  • For the glaze: 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard

Instructions

  1. Preheat oven to 350 F (175 C) and line a roasting tray with parchment paper.
  2. Sauté onion, garlic, and bell pepper in butter for about 4-5 minutes until tender; let cool.
  3. In a mixing bowl, combine bread crumbs, cheddar cheese, eggs, tomato passata, sautéed veggies, ground beef, Worcestershire sauce, creole seasoning, parsley, and salt. Mix gently.
  4. Shape the mixture into a loaf in a loaf pan and transfer to the roasting tray.
  5. Bake for about 50 minutes.
  6. Prepare the glaze by mixing ketchup, brown sugar, and mustard.
  7. Spread the glaze on the meatloaf and bake for an additional 20 minutes until cooked through (internal temperature of 160 F/71 C). Let rest before slicing.
