  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium ripe pears (peeled and diced)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cardamom.
  3. In a large bowl, cream softened butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Gradually add dry ingredients to wet mixture while alternating with milk; mix until just combined.
  6. Fold in diced pears gently.
  7. Divide batter evenly among muffin cups, filling each two-thirds full.
