Ingredients

  • Mini or Persian cucumbers
  • Green onion
  • Sesame seeds
  • Low-sodium soy sauce
  • Rice vinegar
  • Sesame oil
  • Honey or maple syrup
  • Garlic cloves
  • Red chili flakes

Instructions

  1. Prepare the Cucumbers: Wash and dry the cucumbers, then cut off both ends. Use chopsticks to prevent slicing through completely while making diagonal cuts at a 45° angle. Flip and cut again at 90°. Cut spiraled cucumbers in half and place in a mixing bowl.
  2. Make the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and chili flakes until well combined. Adjust seasoning to taste.
  3. Assemble the Salad: Pour dressing over cucumbers and gently mix to coat. Garnish with sliced green onions and sesame seeds before serving.
