  • 8 mini or Persian cucumbers
  • 1 green onion (sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce (or tamari for gluten-free)
  • 1 ½ tbsp rice vinegar or white grape juice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes

Instructions

  1. Wash and dry the cucumbers. Trim the ends and cut them into accordion slices by placing them between chopsticks and slicing at a 45° angle.
