Ingredients

  • 1 cup cooked rice noodles
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • ½ cup sliced bell peppers
  • ½ cup cucumber, julienned
  • ½ cup cooked shrimp or tofu
  • 2 tbsp chopped peanuts
  • 2 tbsp fresh cilantro

Peanut Sauce:

  • 3 tbsp peanut butter

  • 1 tbsp soy sauce

  • 1 tbsp lime juice

  • 1 tsp honey

  • 2 tbsp warm water

Instructions

  • In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, and water until smooth.

  • In a large bowl, combine noodles, carrots, cabbage, peppers, cucumber, and shrimp or tofu.
