  • 2 cups uncooked rice
  • 2 small heads of broccoli, chopped
  • 3 large chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp mayonnaise
  • 2 tbsp sriracha (for the spicy mayo drizzle)
  • sesame seeds for garnish
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder + 2 tbsp water

Instructions

  1. Cook rice according to package instructions.
  2. Marinate chicken with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  3. Air fry marinated chicken at 375°F for 15-20 minutes until golden brown.
  4. Prepare the sticky sauce by whisking soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ground ginger, and an arrowroot slurry in a saucepan over medium heat until thickened.
  5. Blanch broccoli in boiling water for 2-3 minutes.
  6. Assemble bowls with rice as a base topped with sticky chicken and broccoli.
  7. Mix mayonnaise with sriracha and drench over each bowl; sprinkle sesame seeds on top.
